Exploring the Origins of Jalebi Fafda

Delve into the historical roots of Jalebi Fafda, originating in the vibrant streets of Gujarat. This iconic duo has evolved from a traditional snack to a culinary sensation, delighting palates during festivals, celebrations, and everyday indulgences.

Ingredients

For Fafda:

  • 1 cup gram flour
  • ½ tsp carom seeds
  • Salt to taste
  • ½ tsp alkaline salt
  • 2 tbsp oil
  • 1 cup water
  • Oil for frying

For Spice Mix:

  • 1 tsp cumin seeds
  • 1 tsp coriander seeds
  • ½ tsp asafoetida (hing)
  • 10-15 black peppercorns
  • ½ tsp carom seeds
  • 1 tsp rice flour
  • Black salt to taste

For Sugar Syrup:

  • 2 cups sugar
  • 1 cup water
  • A pinch of saffron

For Jalebi:

  • 1 cup all-purpose flour (maida)
  • 1 tsp ghee
  • ¼ cup eno and water mixture
  • Oil for frying

Method

For Fafda:

  1. In a bowl, combine gram flour, carom seeds, salt, alkaline salt (papad Khar), oil, and water. Knead the dough and let it rest for 15-20 mins. Ensure the dough is neither too soft nor too tight.
  2. Apply oil on the dough. Flatten small portions using your palm to make the fafda. Fry them in oil until golden. Drain excess oil with tissue and sprinkle the spice mix over them.

For Spice Mix:

  1. Roast cumin seeds, coriander seeds, asafoetida, black pepper, and carom seeds in a hot pan.
  2. Before grinding, add rice flour and black salt. Grind into a smooth powder. Your spice mix is ready.

For Sugar Syrup:

  1. In a pot, cook sugar and water with a pinch of saffron. Stir until the sugar dissolves and the syrup thickens.

For Jalebi:

  1. Mix maida, ghee, and knead to make a batter (not dough). Add eno and water mixture to the batter, ensuring it's not too thick or thin.
  2. Transfer the batter into a squeeze bottle or piping bag. Squeeze the batter into medium-heated oil, frying until golden. Soak the fried jalebis in the sugar syrup.

For Garnish and Serving: Arrange fafda on a serving plate, sprinkle the prepared spice mix, and enjoy them with jalebi.

This crispy, sweet, and spicy snack combo makes for a delightful treat!
