  • 250 grams okra (bhindi), washed and dried
  • 2 medium-sized potatoes, peeled and diced

  • 1 teaspoon cumin seeds (jeera)
  • 2 medium-sized onions, finely chopped
  • Salt to taste
  • 1/2 teaspoon turmeric powder
  • 1 teaspoon red chili powder (adjust according to taste)
  • 2 medium-sized tomatoes, chopped
  • 1/2 teaspoon coriander powder
  • Fresh coriander leaves for garnishing

 

 

Instructions:

 

  1. Heat mustard oil or refined oil in a pan or kadhai over medium heat.
  2. Add cumin seeds (jeera) and let them crackle.
  3. Add finely chopped onions and sauté until translucent. Be careful not to brown the onions.
  4. Add diced potatoes and sauté for 2-3 minutes until they start to soften.
  5. Sprinkle a little salt over the potatoes and continue to sauté for another 3-4 minutes until they are partially cooked.
  6. Now add the washed and dried okra (bhindi) to the pan.
  7. Mix well with the potatoes and onions.
  8. Sprinkle turmeric powder and salt over the vegetables.
  9. Cover and cook for 3-4 minutes until the potatoes are almost tender.
  10. Add red chili powder and chopped tomatoes to the pan.
  11. Mix well and cook for another 2 minutes until the tomatoes are slightly softened.
  12. Finally, sprinkle coriander powder and cook for a minute more.
  13. Garnish with fresh coriander leaves.
  14. Serve hot with roti, rice, or as a side dish.
