Recipe of Sweet Corn Soup

 

Ingredients:

 

For the Stock:

  • 1.5 liters Water
  • 1/4 cup sliced Onions
  • 1/4 cup roughly chopped Carrots
  • 1/4 cup roughly chopped French Beans
  • 1 tsp crushed Garlic
  • 3 Bay leaves
  • 1 tsp Peppercorns

For the Soup:

  • 1 tsp Butter
  • 1 tsp chopped Garlic
  • 1 cup finely chopped Carrots and Beans
  • 1 tbsp boiled Sweet Corn
  • 1 cup Sweet Corn paste
  • Handful chopped Coriander
  • 2 tbsp diluted Corn flour
  • Salt to taste
  • Crushed Pepper

For Egg Drop:

  • 1 Egg

 

 

Method:

 

For the Stock:

  1. In a cooking pot, add water, sliced onions, roughly chopped carrots, French beans, crushed garlic, bay leaves, and peppercorns.
  2. Cover the pot and bring it to a boil until the vegetables are almost mushy.

For the Soup:

  1. In a separate pan, melt butter and sauté chopped garlic.
  2. Add finely chopped carrots and beans to the pan.
  3. Boil sweet corn and grind it to make a paste. Add some of the boiled corn seeds to the pan.
  4. Add salt, crushed pepper, and the corn paste to the pan. Mix well.
  5. Add the vegetable stock (the boiled vegetable water) to the pan after straining out the vegetables. Increase the flame and bring it to a boil.
  6. Add chopped coriander, more salt if needed, crushed pepper, and diluted cornflour paste to the pan. Stir continuously.
  7. Remove the layer of foam on the surface.
  8. For the non-vegetarian version, add boiled and chopped chicken to the vegetable stock and add egg drop in the finishing by beating an egg and adding it to the soup while stirring.
  9. Serve the hot soup garnished with mixed microgreens.
