Kashmiri Rogan Josh
Ingredients
- 400gm Mutton
- 3 tbsp Mustard Oil
- 3-4 Black Cardamom
- Few Cloves
- 2 Cinnamon stick of 2’’
- Few Green Cardamom
- 1 tsp Hing / Asafoetida
- 2 tbsp Ginger – Garlic Paste
- 2 tbsp Kashmiri Red Chilli Powder
- Water
- 500ml Mutton Stock
- 1 cup fried Onions
- 1 tsp Turmeric Powder
- 1 cup Tomato Puree
- 1 tsp Coriander Powder
- 1 tsp Kashmiri Saffron
- Salt to taste
- 1 tbsp Ghee
- 1 tsp dry ginger Powder
- 1 tsp Fennel Seed Powder
- Few Juliennes of Ginger
Method
- Take a deep pan and add some mustard oil and then as the oil heats up add some cinnamon sticks., black cardamom, cloves, some green cardamom and then once it turns aromatic, put the mutton pieces and sauté it till it is slightly golden brown then add some hing powder and mix it.
- Now take a bowl of water and add ginger garlic paste, and Kashmiri red chili powder, and mix it well so that this mixture doesn’t get burnt while cooking. Then add this liquid mixture to the mutton and then put some mutton stock and mix everything well.
- Then add some fried onions, some Kashmiri turmeric powder and mix everything and cover with a lid and let the mutton boil till 80%.
- Now at this stage when the mutton is 80% cooked add some tomato puree and coriander powder and mix well. Again, cover it and let it boil for 10-15mins.
- Now take a big bowl, take out the mutton pieces from the cooking pot, and put it in a bowl.
- Then take a strainer and put the mutton gravy onto it and with the help of a spoon strain all the liquid portion of the gravy.
- Now put this strainedliquid gravy along with mutton pieces back into the cooking pot.
- After that add some saffron and mix well.
- Finally, add some salt and ghee along with the ginger powder and fennel seed powder. Now combine everything well together and then finally add some ginger juliennes.
- Let it cook for another few minutes and your delicious Rogan josh is ready.
