Calories: 280 cal per portion
Ingredients:
250 ml Milk
3 tbsp Custard powder
3 ripe Mangoes
2-3 tbsp Sugar (adjust to taste)
2-3 tbsp Malai (cream)
1/4 cup Whipped Cream
Chopped Pistachios (for garnish)
Method:
Preparation: Gather all the ingredients required for making the mango ice cream. Make sure the mangoes are ripe and sweet for the best flavour.
Thicken the Milk: In a saucepan, pour 250 mL of milk and bring it to a gentle boil. Allow the milk to simmer on low heat, stirring occasionally, until it thickens slightly. This step will create a rich and creamy base for the ice cream.
Prepare Custard Paste: In a separate bowl, take 3 tablespoons of custard powder and mix it with a little milk to create a smooth paste. Make sure there are no lumps in the custard mixture.
Mango Puree: Peel the ripe mangoes and remove the pulp from the seed. Transfer the mango pulp to a blender or food processor and blend it until you get a smooth and creamy mango puree. Set it aside for later use.
Sweeten the Milk: Once the milk has thickened, add 2-3 tablespoons of sugar (adjust according to your taste) to the saucepan. Stir well until the sugar dissolves completely.
Incorporate Custard Mixture: Stir in the custard mixture into the thickened milk, making sure to mix it well to avoid any lumps. This step will give the ice cream a smooth and creamy texture.
Add Malai: Transfer the milk and custard mixture to a different bowl and add 2-3 tablespoons of malai (cream). Mix it well to enhance the richness of the ice cream.
Allow Cooling: Let the ice cream mixture cool down to room temperature. This step is essential before adding the mango puree to the mixture.
Combine Mango Puree: Once the ice cream mixture has cooled, add the prepared mango puree to it. Stir well to incorporate the fruity mango flavour throughout the mixture.
Whipped Cream Addition: Now, add 1/4 cup of whipped cream to the mango mixture and gently fold it in. This will make the ice cream even creamier and softer.
Freeze the Ice Cream: Pour the mango ice cream mixture into a container or a loaf pan. Cover it with a lid or plastic wrap to prevent ice crystals from forming on the surface. Place the container in the freezer.
Whisking Process: Every two hours, take the container out from the freezer and whisk the ice cream vigorously to break up any ice crystals that may have formed. This step ensures a smoother and creamier texture in the final product.
Final Freeze: Keep the mango ice cream in the freezer for a total of 7-8 hours or until it sets completely. The freezing time may vary depending on your freezer's temperature.
Serving Time: After the ice cream has frozen for the recommended time, take it out of the freezer. Use an ice cream scoop to serve it in bowls or cones.
Garnish: To add an extra touch of flavour and appeal, garnish the mango ice cream with some chopped pistachios on top.
Enjoy your homemade mango ice cream as a delightful and refreshing treat on a hot day or whenever you crave the taste of juicy mangoes. The smooth and creamy texture, combined with the fruity sweetness of the mangoes, will make this dessert a favourite among your family and friends.
