Cauliflower ½ cup

Carrot ½ cup

French beans ½ cup

Corn kernels ½ cup

Green peas ½ cup

Oil 1 ½ tbsp

Jeera 1 tsp

Ginger chopped 1 tbsp

Green chilli chopped 2 tsp

Salt 1 tsp

Red chilli powder 1 tsp

Turmeric powder ½ tsp

Coriander powder 1 tbsp

Garam masala ½ tsp

Water as required

Potato boiled & peeled 3 pcs

Coriander chopped 1 tbsp

Chaat masala 1 tsp

Bread crumbs 2 tbsp

 

For slurry:

Refined flour ½ cup

Salt a pinch

Red chilli powder a pinch

Turmeric powder a pinch

Water as required 

 

Bread crumbs 1 cup

Ice-cream sticks 9-10 pcs

Oil for deep frying

Tomato ketchup 

 

Method:

Chop the Vegetables: Start by finely chopping all the vegetables one by one. Ensure they are cut into small pieces to make the lollipop mixture cohesive.

Saute the Aromatics: Heat a pan and add oil. Once the oil is hot, add cumin seeds (jeera) and let them splutter. Then add the finely chopped ginger and green chilli, sauté them until fragrant.

Add Chopped Vegetables: Now, add all the finely chopped vegetables to the pan. Saute them over medium to high flame until they become tender and slightly caramelized.

Season and Spice: Season the sautéed vegetables with salt, red chilli powder, turmeric powder, coriander powder, and garam masala. Mix these spices thoroughly with the vegetables and cook for an additional 5-8 minutes. Once done, turn off the flame and allow this mixture to cool.

Prepare the Lollipop Mixture: In a bowl, combine the grated boiled potatoes, the cooled vegetable mixture, chaat masala, chopped fresh coriander leaves, and bread crumbs. Mix everything well to create a cohesive mixture.

Prepare the Slurry: In a separate bowl, make a slurry by mixing refined flour (maida), a pinch of salt, red chilli powder, turmeric powder, and water. The slurry should have a coating consistency. Set the slurry aside.

Shape the Lollipops: Take a portion of the vegetable mixture, flatten it on your palm, and insert an ice-cream stick in the centre. Shape it like a lollipop, ensuring it's secure.

Coat the Lollipops: Dip each veg lollipop into the prepared slurry, ensuring it's well coated. Then transfer it to a plate with bread crumbs and coat it evenly. This coating will give the lollipops a crispy texture when fried.
