  • ½ cup Curd (Yogurt)
  • 1 tsp Turmeric powder
  • 1 tsp Red chili powder
  • 1 tsp Coriander powder
  • 1 tsp Cumin powder
  • 1 tbsp Ginger-garlic paste
  • 2 Green chilies
  • 2 cups Tomato puree
  • 1 tsp Kasoori methi (Dried fenugreek leaves)
  • 2 tsp Chopped coriander
  • 1 tsp Garam masala

 

 

Method:

 

  1. Heat mustard oil in a kadai (Indian wok), then add bay leaves, cinnamon stick, javitri (mace), green cardamoms, black cardamoms, and black peppercorns. Let them crackle and release their aroma.

  2. Add chopped onion to the kadai and sauté until it turns golden brown.

  3. Meanwhile, marinate the chicken with curd, turmeric powder, red chili powder, coriander powder, and cumin powder. Mix well and set aside.

  4. Once the onions are browned, add ginger-garlic paste and a little water to the kadai. Sauté well.

  5. Add green chilies, a pinch of coriander powder, a pinch of black pepper powder, a pinch of turmeric powder, a pinch of red chili powder, a pinch of cumin powder, and a pinch of garam masala powder. Mix well and cook for 2-3 minutes.

  6. Add the marinated chicken to the kadai and sauté for a few more minutes. Then pour in the tomato puree and mix well. Cover with a lid and let it cook.

  7. Once the chicken is almost cooked, add kasoori methi and chopped coriander. Mix well and cook for another 3-4 minutes.

  8. Finally, sprinkle garam masala over the curry for finishing touches. Cook for another 3-4 minutes.
