Let me take you back to a moment when I first discovered the magic of this delightful treat. It was during a family gathering, and my grandmother, with her skilled hands, crafted these golden orbs of sweetness. As I took my first bite, I was transported to a realm of pure bliss. The grainy texture, the aromatic blend of ghee, and the subtle sweetness of sugar left an indelible mark on my palate. Since then, Rava Ladoo has been a cherished part of my culinary repertoire.
Rava Ladoo Recipe
Ingredients:
- 1 ½ cups suji/rava (semolina)
- 3 tablespoons ghee (clarified butter)
- 2 tablespoons chopped almonds (badam)
- 2 tablespoons chopped cashews (kaju)
- 1 tablespoon chopped pistachios (pista)
- ½ tablespoon raisins (kishmish)
- 1 cup powdered sugar
- ½ cup desiccated coconut
- 1 ½ tablespoons fresh malai (cream)
- ¼ cup milk
- ½ teaspoon cardamom powder
Instructions:
Step 1: Melt the Ghee
Heat a pan over medium heat and add 3 tablespoons of ghee. Allow the ghee to melt completely, preparing it for the next step.
Step 2: Roast the Nuts
Once the ghee is melted, add the chopped almonds, cashews, pistachios, and raisins. Stir and cook until the nuts become light golden brown and crunchy. Remove them from the pan and set aside.
Step 3: Roast the Suji
In the same pan, reduce the heat to low and add 1 ½ cups of suji/rava. Roast the suji until fragrant and slightly golden, stirring continuously for an even roast.
Step 4: Add Coconut
Add ½ cup of desiccated coconut to the roasted suji and continue cooking until the coconut turns light golden and releases a pleasant aroma.
Step 5: Incorporate Sugar
Add 1 cup of powdered sugar to the pan and mix well to ensure even distribution with the roasted suji and coconut.
Step 6: Add Fresh Malai
Mix in 1 ½ tablespoons of fresh malai thoroughly with the other ingredients. This will add a lovely richness to the mixture.
Step 7: Gradually Add Milk
Slowly pour ¼ cup of milk into the pan and mix until well combined. Keep stirring until the mixture thickens and starts to leave the sides of the pan.
Step 8: Finish with Cardamom
Add ½ teaspoon of cardamom powder to the mixture and stir well to incorporate the fragrant spice.
Step 9: Let It Cool
Transfer the mixture to a plate and let it cool completely before shaping the ladoos.
Step 10: Shape the Ladoos
Once cooled, crumble the mixture using your hands. Add the roasted nuts that were set aside earlier. Then, take small portions and roll them into round ladoos. Repeat with the remaining mixture.
