  • Red chili powder – ½ tsp

  • Ghee – 1 tbsp

Dum Aloo Ki Sabzi

  • Fenugreek seeds (Methi) – ½ tsp

  • Dry red chilies – 2 pcs
  • Garlic (chopped) – 2 tsp
  • Asafoetida (Hing) – ¼ tsp
  • Green chili (chopped) – 1 tsp
  • Salt – ½ tsp
  • Turmeric powder – ½ tsp
  • Red chili powder – ½ tsp
  • Water – as required
  • Sugar – 1 tsp

Boondi Raita

  • Curd – 2 cups
  • Black salt – a pinch
  • Boondi – ½ cup
  • Roasted cumin powder – ½ tsp

Instructions of Netram Thali Prayagraj Recipe

Step 1: Prepare Aloo Baingan ki Sabzi

I start by peeling and dicing the potatoes and cutting the brinjal into wedges. In my pressure cooker, I heat 1 tbsp of mustard oil until it smokes. Then, I add 1 tsp cumin seeds and ½ tsp asafoetida. Next, I add 1 tbsp chopped garlic, 1 tsp chopped ginger, and 1 tsp chopped green chili. I sauté until the aroma fills the cooker.

After that, I toss in the diced potatoes and brinjal wedges along with 1 tsp turmeric powder, 1 tsp red chili powder, ½ tsp coriander powder, and 1 tsp salt. I mix well, add 2 chopped tomatoes, and pressure cook for one whistle on medium flame. Once done, I let the pressure release naturally, open the lid, reduce the moisture on high flame, and finally add ½ cup chopped dill leaves. This completes the Aloo Baingan ki Sabzi.

Step 2: Prepare Dum Aloo Ki Sabzi

I boil the potatoes until they are cooked but still firm, peel them, and roughly mash them. In a pan, I heat 1 tbsp oil and add 1 tsp cumin seeds, a pinch of asafoetida, and 1 tsp chopped green chili. I then add 1 tbsp Dum Aloo Masala and a little water to form a thick gravy. I add the mashed potatoes, mix well, and season with ½ tsp salt and 1 tbsp amchur powder. I let it cook on low flame for 5 minutes and garnish with 1 tbsp chopped coriander.

Step 3: Prepare Urad Dal Poori

First, I soak ¼ cup urad dal and then grind it with 8-10 black peppercorns, 1 tsp fennel seeds, ½ inch ginger, and 1 green chili to make a coarse paste. For the dough, I mix 2 cups wheat flour with salt, ½ tsp red chili powder, ¼ tsp turmeric, and 1 tbsp ghee. I add the urad dal paste and knead the mixture into a soft dough using water as required.

Once the dough is ready, I roll it into small rounds and deep fry them in hot oil until they are golden brown and crisp.

Step 4: Prepare Kaddu Ki Sabzi

I cut the pumpkin into cubes, keeping the skin on. In a pan, I heat 2 tbsp mustard oil and add ½ tsp fenugreek seeds, 1 tsp fennel seeds, 1 tsp cumin seeds, and 2 dry red chilies. After a few seconds, I add 2 tsp chopped garlic and 1 tsp chopped green chili. Then, I add the pumpkin cubes, ½ tsp salt, ½ tsp turmeric powder, and ½ tsp red chili powder with a little water. I cover the pan and let the pumpkin cook until it becomes soft.

Finally, I add 1 tsp sugar and 1 tsp amchur powder, mix well, and cook for another minute. The Kaddu Ki Sabzi is now ready.

Step 5: Prepare Boondi Raita

I whisk 2 cups curd until it is smooth and creamy. Then, I add a pinch of black salt, ½ tsp roasted cumin powder, and ½ tsp red chili powder. I mix in ½ cup crispy boondi and let the raita sit for a few minutes so that the boondi softens slightly. This makes the Boondi Raita a cool and refreshing side.

After preparing each dish, I carefully arrange them on a large plate.
