Method:

Cajun Spice:

  1. Grind together Deggi Mirch Powder, Cumin Powder, Oregano, Pepper Powder, Garlic Powder, Thyme, and Salt in a grinder to make Cajun spice mix.

  1. Soak parboiled rice in water and set it aside.
  2. Heat olive oil in a saucepan or deep kadhai over medium heat. Add chopped garlic and bacon, cook until the bacon's fat is rendered.
  3. Add chicken sausages, pork chorizos, diced onions, yellow pepper, red pepper, green pepper, black olives, and green olives. Stir well.
  4. Incorporate tomato puree into the mixture and mix it thoroughly with the veggies and bacon.
  5. Add the prepared Cajun spice followed by short-grain rice. Mix everything together.
  6. Pour water into the mixture, then add salt and garlic flakes while the rice is cooking.
  7. When the rice is halfway cooked, add broccoli to the mixture. Close the lid and cook for about 15 minutes.
