Moong Dal Stuffed Aloo Tikki Chaat

 

Ingredients:

  • 2 tbsp Ghee / Clarified Butter
  • 1/2 tsp Cumin Seeds
  • 1 tsp Hing / Asafoetida
  • 1 tsp chopped Ginger & Green Chillies
  • 1 cup Soaked Moong Dal
  • 1/2 cup chopped Cashews
  • 1 tsp Red Chilli Powder
  • 1/2 tsp Turmeric Powder
  • 1 tsp Coriander Powder
  • Salt to taste
  • Water
  • 1 tbsp chopped Coriander Leaves
  • 1 tbsp chopped Dates
  • 1 tsp Amchur Powder

For Aloo Tikki:

  • 2 cups Boiled & Mashed Potatoes
  • 1 tsp roasted Cumin Powder
  • Salt to taste
  • 2 tbsp Corn Flour
  • Pithi Stuffing
  • 1/2 cup Ghee / Clarified Butter

For Curd Mix:

  • 1 cup Yogurt
  • Black Salt to taste
  • 1 tsp Powdered Sugar

 

 

Method:

 

For Stuffing:

  1. Heat ghee in a pan. Add cumin seeds, hing, chopped ginger, chopped green chilies, and sauté.
  2. Add soaked moong dal and sauté for some time.
  3. Add salt, water, chopped cashew nuts, red chilli powder, turmeric powder, and coriander powder. Mix well, cover, and cook for a few minutes.
  4. Once the dal is cooked, add amchur powder, dates, and chopped coriander leaves. Mix well. The stuffing is ready.

For Aloo Tikki:

  1. In a bowl, mix mashed potatoes, roasted cumin powder, salt, and cornflour.
  2. Take a small portion of the potato mixture and flatten it into a round shape.
  3. Place a generous amount of the prepared moong dal stuffing in the center of the flattened potato mixture.
  4. Carefully seal the edges and shape it into a tikki.
  5. Dust the tikki with cornflour.
  6. Heat ghee in a pan and shallow fry the tikkis until golden brown and crispy.

For Curd Mix:

  1. Mix yogurt, black salt, and powdered sugar in a bowl. Keep aside.
