Mix Veg Paratha Recipe Description:

This healthy treat is made with a symphony of colors and tastes. It starts with cumin seeds, ginger, and green chilies making a melody in a pan. This sets the stage for a flavorful dance of grated carrots, crushed peas, and cauliflower. The spices join in, making a harmonious blend that lifts the senses. A mashed potato, the unsung hero, holds this vegetable orchestra together.

You carefully work the atta dough into round shapes that hold different kinds of vegetables. As the rolling pin moves, a flatbread appears, ready to cook on the hot tawa. A sprinkle of oil makes the paratha crisp up, revealing layers of taste and tradition. It is a feast on a plate when served hot with butter.

Mix Veg Paratha Recipe

Ingredients:

  • 1 tbsp Oil
  • 1 tsp Cumin Seeds
  • 1 tbsp Chopped Ginger
  • 1 tbsp Chopped Green Chilli
  • ½ cup Grated Carrots
  • ½ cup Boiled & Crushed Green Peas
  • ½ cup Grated Cauliflower
  • Salt to taste
  • 1 tsp Turmeric Powder
  • 1 tsp Red Chilli Powder
  • 1 tsp Coriander Powder
  • A Pinch of Garam Masala
  • 1/4 cup Boiled & Mashed Potatoes
  • Atta Dough
  • Oil
  • Butter (as accompaniment)

Method:

  1. Take a pan, add oil and cumin seeds. Once it crackles, add chopped ginger and green chilies. Sauté well to release the flavors.

  2. Add grated carrots, boiled and crushed green peas, and crushed cauliflower to the pan. Mix all the vegetables well.

  3. To prevent excess moisture, add salt to the vegetables. Season with turmeric powder, red chili powder, and coriander powder. Mix thoroughly.

  4. Once the vegetables are cooked, ensuring there is no excess moisture, set the mixture aside and let it cool. Optionally, add a pinch of garam masala for enhanced flavor.

  5. Mash a boiled potato and add it to the mixed vegetable mixture. The mashed potato helps bind the stuffing together.

  6. Take wheat flour, knead it with water and salt. Take a small portion of the atta dough, make it round, and flatten it. Keep the edges thin while keeping the middle portion thick.

  7. Place the mixed vegetable stuffing on the flattened dough. Fold the edges over the stuffing, ensuring all the filling is inside the paratha.

  8. Shape the stuffed dough into a ball, dust it with flour, and roll it out into a flatbread, similar to roti or Indian bread.

  9. Heat a tawa (griddle) on the stove. Place the paratha on the hot tawa and let it cook.

  10. Once one side is cooked, flip the paratha to the other side. Pour some oil to make it crispy, then repeat the process for the other side.

  11. Your mix veg paratha is ready. Serve it hot with a generous spoon of butter. Enjoy!
