Ingredients:

 

  • 2 Tomatoes

  • 6-7 Onions

  • 2 tbsp Oil

  • 1 Bay leaf

  • 1 inch Cinnamon stick

  • 4-5 Cloves

  • 2 Green cardamoms

  • 1 Black cardamom

  • 10-12 Black peppercorns

  • ½ tbsp Chopped ginger

  • 3-4 Garlic cloves

  • 1 tbsp Cumin seeds (Jeera)

  • Water, as required

  • 1 tbsp Mustard oil

  • ½ tbsp Cumin seeds (Jeera)

  • ½ tsp Asafoetida (Hing)

  • 2 Green chillies

  • 5-6 Garlic cloves

  • ½ tbsp Salt

  • ½ tbsp Turmeric powder

  • 1 tbsp Red chilli powder

  • 1 tbsp Coriander powder

  • 1 tbsp Cumin powder (Jeera powder)

  • ½ cup Curd (Yogurt)

  • 1 tbsp Kasoori methi (Dried fenugreek leaves)

  • ½ tbsp Sabzi masala

  • 2 tbsp Fresh cream (Malai)

  • 1 tbsp Chopped coriander leaves

 

 

Method:

 

  1. Preparation:

    • Cut some tomatoes in half and dice the rest, removing the seeds from the diced tomatoes. Set aside.
    • Dice some onions, keep some whole, and make cross gashes on others.
  2. Cooking the Onions and Tomatoes:

    • Heat oil in a pan. Add whole peeled onions, bay leaf, cinnamon, green cardamoms, black cardamom, cloves, and black peppercorns. Sauté until the onions soften. Remove and set aside.
    • In the same pan, add halved tomatoes. Cook until slightly softened. Remove and set aside.
  3. Preparing the Paste:

    • In the same pan, add diced onions. Cook until translucent. Add chopped ginger, garlic, and cumin seeds. Sauté.
    • Add the reserved tomato seeds and cook for 3-4 minutes. Then transfer to a mixer jar and grind into a paste.
  4. Cooking the Gravy:

    • Heat mustard oil in a pan. Add cumin seeds and asafoetida. Let them crackle.

    • Stir in the curd and cook.
    • Add kasoori methi and sabzi masala. Cook for a few minutes.

    • Add the cooked tomatoes and onions to the gravy.
    • Cover and cook for 8-10 minutes over medium-low heat.
    • Finally, add fresh cream and chopped coriander. Mix well.
