  • ½ tsp Turmeric powder
  • ½ cup Onion, thick slices
  • 1 tbsp Chopped coriander

Method:

 

  1. Preparation: Wash and clean the potatoes thoroughly. Peel them and transfer to a bowl of water to prevent browning. Cut the potatoes into thick slices.

  2. Cooking: Heat mustard oil in a pan over medium-high heat. Add cumin seeds, nigella seeds, asafoetida, and chilli flakes. Let them splutter and release their flavors.

  3. Sauteing Potatoes: Add the sliced potatoes to the pan. Season with salt and turmeric powder. Saute on high heat to evenly coat the potatoes with the spices.

  4. Partial Cooking: Reduce the heat to medium-low, cover the pan, and let the potatoes cook for 4-5 minutes until they soften slightly.

  5. Adding Onions: When the potatoes are about 50% cooked, add thick slices of onion to the pan. Mix well, cover, and cook until the potatoes are fully cooked and tender.

  6. Final Touch: Once the potatoes are cooked, remove the lid. Add chopped coriander leaves and amchur powder. Gently mix to distribute the spices evenly.

  7. Serving: Transfer Aloo Ki Katliyan to a serving bowl, garnish with additional coriander leaves, and serve hot with rotis or dal rice.
