Lauki ka Bharta takes me back to my childhood, when my mother used to prepare this dish during the summer months.   • Garlic (chopped) – ½ tsp
  • Water – as required

Instructions:

 

Step 1: Prepare and Roast the Lauki
Peel the lauki (bottle gourd) and make small insertions all over it. Insert garlic cloves into these insertions. Brush oil all over the lauki. Place it directly on a gas flame and roast until the outer skin is charred. Turn it frequently to ensure even roasting.

Step 2: Prepare the Masala

Heat 1 tbsp oil in a pan over medium heat. Add cumin seeds and let them crackle. Once crackled, add the chopped onions and sauté until golden brown. Then, add chopped ginger, green chilies, and garlic. Sauté until the raw aroma of the garlic fades. Finally, add the chopped tomatoes and salt, cooking until the tomatoes become soft and mushy.

Step 3: Scrape and Cook Lauki

After roasting, scrape off most of the black charred skin of the lauki, leaving a little bit for the smoky flavor. Cut the roasted lauki into big pieces. Heat it on the stove once again to ensure it is cooked thoroughly from all sides.

Step 4: Mash the Lauki

Once cooked, chop the lauki into smaller pieces. Mash it thoroughly using a masher to make the texture smooth. Finely chop any larger pieces with a knife if required.

Add red chili powder, turmeric powder, and coriander powder to the pan with the onion-tomato masala. Mix well and cook for 2 more minutes. Now, add the mashed lauki and mix it thoroughly with the masala. Add chopped coriander leaves, green chilies, and a splash of water to adjust the consistency. Cook for a few more minutes until everything blends together well. Adjust salt and add sabzi masala if desired.

Step 6: Serve

Serve the Lauki ka Bharta hot, garnished with fresh coriander. Enjoy it with roti or paratha for a wholesome meal.
