For the Tempering:

  • 2 tbsp Mustard Oil
  • 1 tbsp Cumin Seeds
  • 1 tbsp Mustard Seeds
  • 1 cup Chopped Onions
  • 1 tbsp Ginger-Garlic Paste
  • 1/2 tsp Turmeric Powder
  • 1 tsp Red Chilli Powder
  • 1 tsp Coriander Powder
  • Salt to taste
  • 1 cup Tomatoes
  • 1/4 cup Cashew Nut Powder
  • Handful chopped Coriander


 

Method:

 

For the Stuffing:

  1. In a bowl, mix dry mango powder, fennel seed powder, turmeric powder, red chilli powder, salt to taste, coriander powder, and mustard oil. Mix well to form a nice mixture.

For the Tempering:

  1. Heat mustard oil in a cooking pot. Add cumin seeds and mustard seeds. Allow them to crackle.
  2. Add chopped onions to the hot oil and sauté until brown.
  3. Fill the eggplants/brinjals with the prepared stuffing mixture.
  4. Add ginger-garlic paste to the onions and sauté until fragrant.
  5. Stir in turmeric powder, red chilli powder, coriander powder, and salt. Mix well.
  6. Add chopped tomatoes and cook until softened.
  7. Pour some water into the pot and place the stuffed brinjals in it. Add more water if needed.
  8. Cover with a lid and let it cook for about 5-10 minutes.
  9. After 5 to 10 minutes, add cashew nut powder and a handful of chopped coriander. Mix well.
