For Masala Paste:

  • Mint leaves - ½ cup
  • Coriander leaves - ½ cup
  • Green chilli - 3 pcs
  • Garlic - 8-9 cloves
  • Ginger - ½ inch
  • Water as required
  • Red chilli paste - 1 tbsp
  • Jeera powder - ½ tsp
  • Coriander powder - ½ tsp
  • Salt - ½ tsp
  • Sugar - 1 tsp
  • Amchur powder - ½ tsp

For Cooking Vegetables:

  • Potato - 2 pcs
  • Pumpkin dices - 200 gms
  • Brown chana soaked - 1 cup
  • Water as required
  • Salt - ½ tsp

For Making Sabji:

  • Mustard oil - ¼ cup
  • Dry red chillies - 2 pcs
  • Panch Phoran - ½ tbsp
  • Kasoori methi - 1 tbsp
  • Powdered masala - 2 tbsp
  • Wet masala paste
  • Turmeric powder - 1 tsp
  • Red chilli powder - ½ tbsp
  • Boiled potato-pumpkin-chana
  • Water as required
  • Coriander chopped - 1 tbsp

For Kachori:

  • Urad dal soaked - 1 cup
  • Garlic - 4-5 cloves
  • Black pepper - 6-7 pcs
  • Green chilli - 2 pcs
  • Hing - ½ tsp
  • Salt - ½ tsp
  • Water as required
  • Refined flour - 1½ cup
  • Suji - ½ cup
  • Salt - ½ tsp

For Plating:

  • Coriander chopped
  • Namkeen sev

 

Instructions of Kolkata's Club Kachori 

Step 1: Prepare Masala Powder

Dry Roast Spices: Start by dry roasting the coriander seeds, bay leaf, cloves, cardamom, cinnamon, and ajwain in a pan until they release a fragrant aroma. This will bring out the essential oils in the spices, enhancing the flavor. Allow the roasted spices to cool before grinding them into a fine powder. Set this powdered masala aside for later use.
